But eggs at dinner can be just more than just scrambled eggs; they can truly be the star! Whether they're stirred into soups, baked with veggies or lentils, or fried on top of polenta or greens, here are 20 delicious ways to eat eggs for dinner tonight.

I'm sorry but I just had to point out the travesty that is the brown omelet pictured in item 10. No, no, no, no, no, no! There is nothing worse than a browned omelet! That means it's overcooked, dammit!
Other than that, though, I love this article. :)

@LiztheCook Ugh, agreed. Browned any kind of eggs, for that matter, are disgusting.

@LiztheCook There's a reason that people generally ask one "how they like their eggs"--people have different preferences! I happen to think that omelet looks delicious. :)

I like a runny egg over a baked potato-standard russet or a sweet potato, doesn't matter as its a great combination.

Thanks for the basic (and then add whatever you want) egg bake "recipe". Very helpful. I love eggs, day or night.

Egg Soup is one of my favorite recipes born out of "sick of ramen" necessity. Now what I love on a cold night is a scrambled egg dropped into boiling broth - you can add veggies (a broccoli slaw mix from the produce section is great for this) and make it a more interesting soup if you must, but there's something very nice about the way the egg cooks in the liquid as nice long noodley strands
